Passion Fruit Mojito

Ingredients

1 ounce lime juice
2 ounces Passion Fruit (pulp and seeds)
3 ounces club soda
1 ounce white rum or light rum
6 mint leaves
2 tablespoons sugar
Handful crushed ice
Extra lime wedges and mint sprigs for garnish

Steps

Muddle mint leaves with sugar and lime juice in tall glass. Stir in passion fruit, club soda, and rum. Add crushed ice, and garnish with lime wedge and mint sprig. Serve immediately.

Grilled Potato Skewers

Grilled Potato Skewers

Ingredients:

2 pounds of Fingerling Potatoes (or other baby potatoes)
1/4 cup olive oil
1 teaspoon paprika
1 tablespoon sherry vinegar
Salt and pepper, to taste
6 to 8 skewers
Black Garlic Mayonnaise

Steps:

Parboil potatoes for 5 to 7 minutes. Drain and chill.  Heat the grill to medium high. In a large bowl, add the potatoes, olive oil, paprika, sherry vinegar, and salt and pepper, and toss to coat. Skewer the potatoes and place on the grill. Cook for 15 to 20 minutes, turning frequently, until cooked through. Serve with Black Garlic Mayonnaise.

Corn, Jicama & Pineapple Salsa

Corn, Jicama, & Pineapple Salsa

Ingredients:

1 1/2 cups finely chopped Jicama
1 cup finely chopped fresh pineapple
1 cup niblet corn
1/2 cup diced green or red bell pepper
1/4 Habanero Chile, finely chopped
2 tablespoons chopped Fresh Cilantro
1 clove garlic, minced
Salt to taste

Steps

Combine the jicama, pineapple, corn, bell pepper, Habanero chile, cilantro and garlic in a blender or food processor container. Process in 2 batches, using a few stop-and-start motions, for a relish-like consistency. Cover and chill for at least 1 hour to allow flavors to blend.
