Caribbean Dessert Pizza
One 20-ounce package refrigerated, rolled, sugar cookie dough
One 4-serving package instant vanilla pudding
1 3/4 cups low-fat milk
8-10 baby kiwifruit, halved
1 mango, peeled, seeded, and thinly sliced
1/2 cup sliced strawberries
Frozen whipped dessert topping, thawed (optional garnish)
1/4 cup toasted coconut
Preheat oven to 350 degrees.
Slice cookie dough into 1/4-inch slices. Arrange 3/4 of slices in lightly greased 12-inch pizza pan. Press dough into pan to make a crust. Bake 12-14 minutes or until lightly browned. Cool 10 minutes while preparing filling. (Place remaining slices on cookie sheet; bake as directed on package.)
For filling, stir together pudding and milk until well blended. Spread over crust. Arrange slices of mango, berries, and kiwifruit decoratively over filling. (If preparing ahead, cover and chill up to 2 hours before serving.)
To serve, spoon dollops of whipped topping over pizza; sprinkle with toasted coconut. Cut into 8 wedges.
