Fiesta Fettucine with Basil Tomatoes and Garlic
1 teaspoon olive oil
2 Frieda’s® Shallots peeled and chopped or 2 green onions chopped
2 Frieda’s® Elephant Garlic Cloves minced
3 cups diced fresh tomatoes
2 cups torn fresh spinach leaves
1/4 cup Frieda’s® Fresh Basil chopped
1/4 teaspoon salt
1/8 – 1/4 teaspoon pepper
Half of a 12-ounce package Frieda’s® Fiesta Won Ton Wrappers
Fresh basil sprigs for garnish (optional)
In a large non-stick skillet, heat oil. Sauté shallots and garlic for 2 minutes. Stir in tomatoes, spinach, basil, salt and pepper. Cook and stir occasionally over medium heat for 5 minutes or until mixture is heated through. Cover and keep warm over low heat. In a 3-quart saucepan, bring water to boiling. Cut won ton squares into 1/4-inch thick strips; separate and drop into boiling water. Cook stirring occasionally to keep them separated for about 3 minutes or until done. Drain and serve immediately topped with tomato sauce. Garnish with fresh basil if desired.
Tomato and Mushroom Sauce variation: Add 8-oz. pkg. Dried Mushroom Medley, reconstituted and chopped along with tomatoes. Continue as directed.
