Fruited Squash Halves

Ingredients:

2 Frieda’s Sweet Dumpling, Delicata, or Golden Nugget Squash
1/2 cup chopped Frieda’s Papaya, or peaches or nectarines
1/2 cup chopped fresh plums
1/2 cup diced pineapple
1/2 cup seedless grapes, halved
1/4 cup melted butter or margarine
1 tablespoon brown sugar
1 tablespoon grated Frieda’s Fresh Ginger Root
1/2 teaspoon curry powder
1 tablespoon snipped Frieda’s Fresh Chives

Steps:

Slice squash in half from stem to stem. Remove seeds. Place squash halves, cut side down, with 1/4 cup of water in a microwaveable dish. Cover, leaving one corner vented.  Micro-cook on High power for 7 to 10 Minutes, turning once halfway through cooking time, till squash is tender. Turn squash cut side up in dish.

For filling, toss together Papaya or peaches, plums, pineapple, and grapes. Spoon one fourth of the mixture into each squash half. Stir together the melted butter or margarine, sugar, Ginger root, and curry powder. Drizzle mixture over fruit in squash. Sprinkle Chives over each serving. Cover loosely with plastic wrap. Micro-cook on High power for 4 minutes or till heated through, turning once. Serve.
