Ginger Chicken with Papaya

Ingredients

3 tablespoons cooking oil
2 tablespoons minced ginger root
1 garlic clove, minced
2 green onions, chopped
1 3-pound broiler-frying chicken, cut up
2 medium sunrise or Hawaiian papayas (or 1 medium Miradol papaya), peeled, seeded, and cut into 1-inch cubes
1 large green bell pepper, chopped
3 cups cooked rice
3/4 cup white wine
3/4 cup low-sodium chicken broth
2 tablespoons brown sugar
1 tablespoon soy sauce
1 teaspoon black pepper

Steps

In large skillet, heat cooking oil; add ginger, garlic, and onions. Sauté 2 minutes. Add chicken pieces and brown over medium heat on all sides. Remove from heat; pour off excess oil.

In shallow baking pan, evenly place chicken pieces and onion mixture. Place papaya pieces, green pepper pieces, and rice around chicken.

Stir together wine, chicken broth, brown sugar, soy sauce, and pepper; pour mixture over chicken.

Cover and bake 40 minutes. Uncover and bake 15 minutes more or until chicken is done.
