Fresh Rambutan
More like a tropical sea creature than a Southeast Asian delicacy, the spiky crimson-red shell of the rambutan, or hairy cherry as it's known in Vietnam, covers a succulent, pearly, juicy fruit with a fragrant rosy flavor of strawberries and muscat. Grown in brilliant clusters on 20-foot trees in Malaysia and the Philippines, this punky relative of the lychee gets its name from the Malay word for hair, "rambut." In the months of July and August, the bunches are seen dangling in woven baskets on the ends of long poles carried by street vendors across Southeast Asia.
The Rambutan's aromatic sweet-tart flavor is best enjoyed fresh out of hand, perhaps with a drizzle of honey or lime juice. Also excellent in compotes, preserves and curries, or sublime as little jeweled pearls in a seafood reduction sauce. Crack the exotic-looking shells in half and display with other tropical fruits and cheeses.
Usage: Enjoy alone or in fruit salads, sauces and chicken dishes. Excellent decorative garnish.
