Rosy Crab Apple Pie
1 cup sugar
1 tbsp. flour
1/4 tsp. salt
6 cups Crab Apples, unpeeled and finely chopped
Pastry for 2 crust pie (9 inch)
1 tsp. vanilla
1 1/3 tbsp. lemon juice
1/3 cup water
1 1/2 tbsp. butter or margarine
Pre-heat oven to 450F. Combine sugar, flour, and salt; toss together with apples. Pour apple mixture into pastry-lined pan. Sprinkle with mixture of vanilla, lemon juice, and water. Dot with butter or margarine. Cover with top crust and bake in 450F oven for 10 minutes; then reduce heat to 375F and bake about 45 minutes or until done.
