Ricotta Apple Crepes
Serve this nutritious dish for breakfast or a special dessert.
3 tbsp. butter or margarine
2 large Frieda's Asian Pears, sliced, or Grannysmith or Rome Beauty apples, sliced
1/3 cup raisins
1/3 cup chopped walnuts
1 tbsp. lemon juice
3 tbsp. brown sugar
¼ tsp. ground cinnamon
2/3 cup ricotta cheese
2 tbsp. brown sugar
4 Frieda's Crepês, at room temperature
Sifted confectioners' sugar
For filling, melt butter or margarine in a skillet. Add Asian Pear or apple slices, raisins, and walnuts; sauté over medium heat about 5 minutes or till fruit slices are tender. Stir in lemon juice, the first 3 tablespoons brown sugar, and cinnamon. Remove from heat.
In food processor or mixer bowl, combine ricotta cheese, and remaining 2 tablespoons brown sugar till well blended. To prepare crepes, spoon one-fourth of the apple mixture down center of each crepê; top each with a dollop of the ricotta cheese mixture. Roll up; sprinkle with confectioners' sugar. Repeat with remaining crepês, apples, and cheese mixture. Makes 4 servings.
