Mediterranean Pasta Salad
6 Tbsp. Frieda’s Garlic Delight Green Olive Flavor, or
more to taste
1 red bell pepper (seed, then chop into bite-size pieces)
1 green bell pepper (seed, then chop into bite-size pieces)
1 yellow bell pepper (seed, then chop into bite-size pieces)
1 small Frieda’s Shallot, finely chopped
1/2 cup green olives, sliced
10 cherry tomatoes, halved
1/2 cup chopped flat leaf parsley
1 lb. cooked pasta, room temperature (bowtie, rigatoni or fusilli)
2 chicken breasts cooked and cut into ½ inch cubes, chilled
Salt and pepper to taste
In a large bowl, combine bell peppers, shallot, olives, tomatoes, parsley and
Frieda’s Garlic Delight Original Flavor. Mix well. Then mix in pasta.
Add chicken and toss until well coated. Chill for 1 to 2 hours prior to serving
for optimum flavor.
