Artichokes: California’s State Vegetable


California just announced artichokes as the state’s official vegetable, and we couldn’t be happier about it!  After all, the mild coastal climate of Central California produces some of the world’s most flavorful produce, and the artichoke may just be the crowning glory.

We are very proud to feature three of the finest Italian artichokes, grown with loving care in Lompoc, California: the Fiesole Baby Purple (fee-eh-so-lay), Fiore Viola, and Sangria Artichokes.

Artichokes can be prepared so many different ways. With the Fiesole, you can braise them in olive oil and white wine.  With the meaty Fiore Viola, go the Italian route and stuff them with breadcrumbs and cheese. Or simply steam the beautiful Sangria and feast with your eyes as well as your taste buds.

Did you know? The artichoke is actually a cultivated variety of thistle.  The part we eat is the bud before it flowers. Once an artichoke flowers, it becomes inedible.
