Asian Pear and Shrimp Salad


1/2 cup olive or vegetable oil
1/3 cup lemon juice (try a seedless lemon)
2 tablespoons minced parsley
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
Lettuce leaves
1 pound cooked large shrimp, shelled and deveined
2 Asian pears, cored and thinly sliced
1 cup cucumber, cut into julienne sticks
1 cup fresh watercress


For dressing, place all ingredients in shaker jar or blender container. Cover and shake or blend until mixed.

Arrange lettuce leaves on large salad platter. Mound shrimp in center of lettuce. Arrange Asian pear slices in fanned groups around edge of platter. Place cucumber sticks between pear slices. Garnish with watercress sprigs.

Shake dressing again. Pour over salad or pass with salad.
