Baby Squash and Goat Cheese Salad


1 tablespoon olive or vegetable oil
1 pound Frieda’s Baby Squash, trimmed and halved if large
4 – 5 cups torn mixed salad greens
1 cup garlic croutons
3 ounces goat cheese

Red Wine Vinaigrette:
¼ cup red wine vinegar
¼ cup olive or vegetable oil
2 teaspoons Frieda’s minced Fresh Chives
1 teaspoon Frieda’s minced Fresh Sage or Tarragon
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon pepper


Combine the squash, mixed greens and croutons in a large bowl and toss gently. Tear the goat cheese into small pieces and sprinkle over the salad. Drizzle the dressing over the salad and toss to coat.

Combine all the ingredients in a jar with a tight-fitting lid. Shake vigorously. Makes about 1/2 cup.
