Basic Steamed Artichokes
Prepare artichokes by rinsing, then trimming 1 inch off tops and 1/2 inch off stems. Slightly spread open petals. Place in water with juice of lemon to prevent browning before cooking.
Bring 2 to 3 inches of water to boil in pot fit with steamer insert. Add a few slices of lemon to water. Place artichokes, stem end up, in steamer basket, cover tightly, and steam until tender, about 30 to 45 minutes, depending on size. Artichokes are cooked when a knife easily goes through base.
Enjoy base of each petal by dipping in mayonnaise or your favorite sauce. Or, use these cooked artichokes to make Maria’s Stuffed Artichokes.
