Belgian Endive A La Swisse


1 package Frieda’s Belgian Endives
3/4 cup milk
3/4 cup chicken broth
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon butter or margarine
1 cup shredded Swiss cheese
2 tablespoons drained chopped pimiento
2 tablespoons chopped fresh parsley
2 tablespoons fine dry breadcrumbs (unseasoned)


Remove the bitter cores from the Endives. Fill a large skillet with the milk, broth, salt, and pepper. Add endives. Heat till mixture nearly boils. Reduce heat and simmer gently for 15 minutes or till endives are tender.  Drain endives. Using the 1 tablespoon butter, butter a small baking dish well. Place endives in dish. Sprinkle shredded cheese over to cover.  Mix the pimiento, parsley, and breadcrumbs. Sprinkle mixture evenly over cheese layer. Bake, uncovered, in a 400° oven for 10 to 15 minutes, or till cheese begins to brown and dish is bubbly.
