Berry Champagne Crepes


4 cups fresh strawberries and/or raspberries
3/4 cup sweet sparkling wine (like Martini Asti Spumante)
1/4 cup strawberry or raspberry preserves
1 pint French vanilla or peach ice cream
4 Frieda’s® French Style Crepes, at room temperature


In a blender or food processor, blend until smooth 1-1/2 cups of fresh berries, 1/4 cup sweet sparkling wine, and berry preserves. Pour sauce through a strainer into another bowl and discard seeds. (Sauce can be made and chilled ahead if desired.) In a bowl, gently toss together remaining berries and remaining 1/2-cup sparking wine. Let stand at least 15 minutes to macerate; or cover and chill in refrigerator up to 1 day ahead of serving time.

For each serving, lay one crepe flat on a dessert plate. Top with two scoops of ice cream, and some of the wine-soaked berries. Fold edges of crepe over filling; top with additional berries, and 1/4 of the berry sauce. Serve at once. (Any leftover sparkling wine in the bottle? Serve as a beverage alongside the crepes! Enjoy responsibly.)
