Cactus Pear Melon Salad with Mint Dressing


Lettuce leaves
3 red cactus pears, peeled and thinly sliced
3-4 pepino melons, peeled, seeded, and sliced (or 1 cantaloupe, seeded and sliced)
2 cups cooked bay shrimp

Mint Dressing:
2 tablespoons white vinegar
2 tablespoons lemon juice
3 tablespoons vegetable oil
1 tablespoon chopped fresh mint
1 1/2 teaspoon sugar
Fresh mint sprigs for garnish


On 4 salad plates arrange lettuce leaves; top with cactus pear slices, melon slices, and shrimp.

Measure ingredients into a shaker jar; cover and shake well until blended. Drizzle over salad; garnish with fresh mint sprigs.
