Cajun Style Blackeyed Peas


2 tablespoons cooking oil or olive oil
2 Frieda’s Shallots, peeled and sliced
1 cup green, red, or yellow bell pepper, chopped
1 clove garlic, minced
1 cup fresh mushrooms, chopped
1 (11-ounce) package Frieda’s Blackeyed Peas, cooked according to package directions
2 medium tomatoes, seeded and chopped
1 tablespoon Frieda’s Fresh Thyme, chopped, or 1 teaspoon dried thyme, crushed
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper
1/8 teaspoon bottled hot pepper sauce


In a large skillet, heat oil. Sauté shallots with bell pepper and garlic for 3 minutes. Stir in mushrooms. Sauté 2 minutes more. Stir in blackeyed peas, tomatoes, thyme, salt, black pepper, cayenne, and bottled hot pepper sauce. Cook, stirring occasionally, for 5 minutes more to blend flavors.
