Chayote Guacamole Snack


Frieda’s Chayote Squash, quartered
1 large ripe avocado
1/2 cup chopped onion
3/4 cup shredded sharp cheddar cheese
1 medium tomato, chopped
2 fresh Frieda’s Serrano or Jalapeño Chiles, seeded and chopped
1/2 teaspoon salt
1/4 teaspoon hot pepper sauce
1/4 teaspoon ground black pepper
Crisp tortilla chips


Preheat oven to 350 degrees.

Put chayote in a pan and add enough water to cover. Bring to a boil and cook squash for 15 to 20 minutes or until very tender. Remove seed and peel and chop the squash. Process in a blender or food processor until smooth. Add avocado and blend until pureed. Add next 7 ingredients (save some cheese to garnish) and blend for 5 seconds until well mixed. Line a casserole dish or pie plate with tortilla chips and spoon chayote mixture over the chips. Top with remaining cheese and bake for about 10 minutes or until cheese melts.

Serve immediately with more chips and vegetable sticks.
