Chile Relleno Wontons


2 Frieda’s dried New Mexico peppers, rehydrated according to package directions, stemmed and quartered
1/2 cup chopped cilantro
1/2 cup diced red or green onion
1 cup (4 ounces) shredded Monterey Jack cheese
1 1-pound package Frieda’s Wonton Wrappers
1 tablespoon vegetable oil
2/3 cup water
Salsa, if desired


In food processor bowl or blender container, place rehydrated New Mexico peppers with cilantro and onion. Cover and process until well blended. Stir in cheese. Fill and fold wontons as package directs.

In 12-inch skilled, heat oil; arrange wontons in pan. Sauté over medium-high heat 1 minute, or until bottoms begin to brown. Add water all at once. Cover and reduce heat. Simmer, covered, 5-6 minutes. Uncover. Cook 1 minute more until water is absorbed.

Serve hot with salsa, if desired.
