Chinese Chicken Salad in Won Ton Cups


Won Ton Cups:
16 Frieda’s Fiesta Won Ton Wrappers
Vegetable oil

2 1/2 cups shredded Napa (Chinese) cabbage or romaine lettuce
11/2 cups shredded cooked chicken or turkey
1/2 cup bean sprouts, chopped
1 3-ounce package Frieda’s Fresh Waterchestnuts, peeled and chopped
3/4 cup shredded red bell pepper
1/2 cup toasted slivered almonds
1/2 cup Frieda’s Kumquats, sliced (optional)
2 green onions, sliced

1/2 cup rice or white vinegar
1/4 cup sesame oil
1 tablespoon Frieda’s minced Fresh Ginger
1 clove garlic, minced
1/4 teaspoon crushed red pepper


Preheat oven to 35O degrees F. Lightly grease 16 muffin cups. Press one Won Ton Wrapper in each cup. Brush lightly with oil. Bake 5 to 8 minutes or until golden brown. Carefully remove from tins. Arrange 4 cups (mix the colors for fun) on each of 4 dinner plates.

For salad, in a large bowl toss together cabbage, chicken, bean sprouts, Waterchestnuts, bell pepper, almonds, Kumquats if desired, and green onion. In a shaker jar, place all Dressing ingredients. Cover and shake well. Pour over salad mixture; toss well. Spoon salad into won ton cups and serve.
