Microwave Steamed Artichokes
2 large artichokes, such as Sangria artichokes, Fiore Viola artichokes, or globe artichokes
1 Meyer lemon (or regular lemon), cut in half
Additional lemon slices (optional)
2 tablespoons extra virgin olive oil
1/2 cup water
Salt to taste
Rinse artichokes, then trim 1 inch off tops and 1/2 inch off stems. Cut in half lengthwise. Rub cut sides with 1 Meyer lemon half. Season with salt, then place cut side down in microwave-safe baking dish or bowl. Add water, olive oil, and juice of other lemon half. Add lemon slices to water, if desired.
Cover dish tightly with plastic wrap. Microwave on high 18-20 minutes or until tender. Cooking time depends on artichoke size and microwave power.
Remove from microwave, being careful of steam.
Enjoy as they are or use in another recipe such as Grilled Artichokes.
