Fig Bran Muffins with Spiced Butter


1 cup whole bran cereal
1 1/3 cup milk
1 beaten egg
1/4 cup cooking oil
1-1/2 cup all-purpose flour
1/3 cup packed brown sugar
1/2 cup chopped walnuts or pecans
2 teaspoons baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1 cup chopped Dried Figs or Dried Persimmons

Spice Butter:
1/4 cup softened butter
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon brown sugar


In a bowl, combine cereal and milk; let stand 3 minutes. Stir in egg and oil. In another bowl, stir together the flour, brown sugar, walnuts, baking powder, soda, salt, and figs or persimmon pieces. Add bran mixture all at once to flour mixture; stir just until moistened.  (Mixture should be slightly lumpy.)  Fill a greased 12-cup muffin tin about 2/3 full of batter (for slightly smaller muffins, grease 15 muffin cups to fill with batter). Bake in a 400° oven for 20 minutes or until wooden pick inserted in center of muffins comes out clean. Turn muffins out on rack to cool. For spice butter, combine all ingredients; serve with warm muffins. Makes 12 to 15 muffins and ½ cup butter.
