Finnish Potatoes Superb


1 garlic clove cut in half
Butter or margarine
1pound (2 ½ to 3 cups) thinly sliced Frieda’s® Yellow-Finnish Potatoes, or white potatoes
8 to 10 sprigs Frieda’s® Fresh Basil leaves, or 1 teaspoon crushed dried basil
8 to 10 sprigs Frieda’s® Fresh Baby Dill, or 1 teaspoon crushed dillweed
2 green onions, thinly sliced
2 tablespoons butter or margarine
2 tablespoons flour
3/4 cup milk
1/3 cup plain yogurt
1/3 cup sour cream
½ teaspoon ground black pepper
1/8 teaspoon paprika (optional)
1/3 cup grated Parmesan or romano cheese


Rub a shallow 2-quart casserole dish with cut garlic; discard garlic. Lightly butter the dish. Layer the sliced potatoes with the sprigs of dill and basil leaves and green onion scattered between layers. For sauce, in a small saucepan melt the 2 tbsp. butter; stir in flour. Add milk all at once; cook and stir until mixture thickens and bubbles. Turn heat to low; stir in yogurt, sour cream, and seasonings. Cook 1 minute more. Pour mixture over potatoes to cover them completely. Cover casserole; place in a 375°F oven for 45 minutes. Uncover; sprinkle cheese on top. Bake 15 to 20 minutes more until potatoes are tender. An excellent side dish for poultry or barbecued meats.
