Fruit and Shallot Stir Fry


2 tablespoons butter or margarine
1 Frieda’s Asian Pear, cored and chopped
1 papaya or mango, peeled, seeded, and cut into 1-inch pieces
6 Frieda’s Kumquats, sliced
1 3-ounce package Frieda’s Shallots, sliced
2 tablespoons port wine or claret
1 tablespoon honey
Salt to taste


Melt the butter or margarine in a large skillet or wok. Stir-fry the fruit pieces for 5 minutes or until crisp-tender. Add the shallots, wine, and honey and mix well. Cook over medium heat for about 10 minutes or until shallots are browned, stirring frequently. Season with salt.
