1 pint plain or white wine vinegar
1/4 cup fresh herb leaves (such as basil, dill, chervil, chives, lemon grass, marjoram, mint, oregano, rosemary, sage, savory, tarragon, or thyme)
2 or 3 cloves fresh garlic, peeled
In a small saucepan, bring vinegar to boiling. Reduce heat to simmering and add desired fresh herbs. Cover and simmer 20 minutes. Place a few more fresh sprigs or stems of fresh herbs in vinegar bottle along with garlic cloves. Strain boiled vinegar back into bottle. Discard boiled herbs. Cover and let stand overnight.
