Gold Kiwifruit Chia Trifle
4 tablespoons black chia seeds
1 cup water
4 Gold Kiwifruits, peeled and sliced crosswise, about 1/8-inch thick
1 teaspoon maple syrup
1 lemon, zest and juice
1 teaspoon vanilla extract
1 tablespoon chopped fresh mint
1 cup coconut yogurt
2 tablespoons crushed macadamia nuts
Extra maple syrup for drizzling
Soak chia seeds in water for 15 minutes. In food processor container, combine half of kiwifruit slices, maple syrup, lemon juice and zest, vanilla extract, and chia seeds, then blend until smooth.
Split half of the kiwifruit-chia mixture into two individual serving glasses or bowls. Layer in half of the remaining kiwifruit slices, 1/2 tablespoon fresh mint, and 1/2 cup coconut yogurt. Repeat the layers with remaining kiwifruit-chia mixture, kiwifruit slices, mint, and coconut yogurt.
Set in the refrigerator 4 hours or overnight.
To serve, garnish with crushed macadamias and a drizzle of maple syrup.
