Grilled Angelcots® Arugula Salad with Country Ham and Burrata
1 pound Angelcots®, halved and pitted
1/4 cup extra-virgin olive oil, plus more for brushing
Salt and pepper, to taste
1 1/2 tablespoons fresh lemon juice
1 small head Radicchio, cored and thinly sliced
5 ounces baby arugula
1/2 pound burrata cheese, shredded
4 ounces shaved country ham or prosciutto
1 tablespoon aged balsamic vinegar
Heat a grill or grill pan to high. Brush Angelcot halves with oil, then season with salt and pepper. Grill cut sides down over high heat until lightly charred, about 5 minutes. Let cool.
Meanwhile, whisk together lemon juice and 1/4 cup oil; season with salt and pepper. Gently toss in the Angelcots, radicchio and arugula. Transfer to a serving platter and top with burrata and ham, then drizzle with vinegar.
