Grilled Potato Skewers


2 pounds of Fingerling Potatoes (or other baby potatoes)
1/4 cup olive oil
1 teaspoon paprika
1 tablespoon sherry vinegar
Salt and pepper, to taste
6 to 8 skewers
Black Garlic Mayonnaise


Parboil potatoes for 5 to 7 minutes. Drain and chill.  Heat the grill to medium high. In a large bowl, add the potatoes, olive oil, paprika, sherry vinegar, and salt and pepper, and toss to coat. Skewer the potatoes and place on the grill. Cook for 15 to 20 minutes, turning frequently, until cooked through. Serve with Black Garlic Mayonnaise.
