3 avocados, peeled, seeded, and mashed (preferably fresh California Avocados)
2 or 3 Red Fresno Chiles, seeded and chopped*
3 Anaheim Chiles, seeded and chopped*
1/3 cup onion, minced
1/4 cup lemon juice
Salt to taste
Cayenne (ground red pepper) to taste
Combine all ingredients until well blended. Let stand, covered, for at least 1 hour so flavors can blend. Serve with tortilla strips, jicama sticks, celery, carrot sticks, or crackers.
* Use caution when handling chiles! Wear gloves and wash hands thoroughly with soapy water after handling. Keep fingers away from face, eyes, and lips while using chiles.
