Haricots Vert Parisian Style


3 cups Frieda’s Haricots Vert, or fresh green beans, stringed and cut into 2-inch lengths
3 tablespoons butter or margarine
1 tablespoon lemon or lime juice
1 tablespoon fresh chervil or chives, chopped
1 tablespoon fresh basil, savory, sage, or tarragon, chopped
1 ½ teaspoon lemon or lime peel shreds
2 tablespoons pimiento slices


Steam haricots vert or green beans over boiling water for about 8 minutes or until nearly tender. Meanwhile, in a small saucepan, melt the butter or margarine, add lemon or lime juice, herbs, and peel. Mix well. Spoon beans onto serving plate and top with sliced pimiento. Pour butter mixture over beans; toss lightly to coat with sauce. Serve at once.
