Heirloom Tomato Salad with Ginger, Lemon & Chile


4 heirloom tomatoes, cut into 1/2-inch wedges
2 tablespoons minced, peeled fresh ginger
Zest from 1 lemon, plus 2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
1 small jalapeno or serrano chile, seeded and minced
Coarse salt and ground pepper


Toss together heirloom tomatoes, ginger, lemon juice, zest, and extra virgin olive oil. Season to taste with minced chile, salt, and pepper.
