Horseradish Rarebit (Cheese Sauce)


2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1 cup milk or light cream
Salt and pepper to taste
1 to 2 teaspoons Frieda’s Horseradish, grated
1 cup fresh mushrooms, sliced
1 cup shredded sharp cheddar, Swiss, or Muenster cheese
Frieda’s Watercress for garnish

Serve over: Toasted English muffins, waffles, hot cornbread squares, steamed hot vegetables, corn beef or roast beef slices


To prepare sauce: In saucepan, blend together the butter or margarine and flour till melted. Stir in milk or light cream. Add salt and pepper as desired and grated horseradish to taste. Cook and stir sauce over medium heat (a wire whisk works well) until sauce is thickened and bubbly. Cook 1 minute more. Stir in mushrooms and desired shredded cheese. Cook and stir until cheese is melted. To serve, arrange muffin halves, cornbread slices or meat slices on individual plates; spoon sauce over. Garnish with watercress sprigs.
