In-a-Minute Tamarindo-Glazed Chicken


2 Frieda’s Tamarindos
1/3 cup very hot water
2 tablespoons honey
2 teaspoons Dijon mustard
4 chicken breast halves, skinned if desired


Crush the tamarindo shells with your hands. Discard the shells and threads that run along the pulp. Slit the pulp lengthwise with a sharp knife. Remove the seeds. Place the pulp in hot water for 15 minutes. Mash the pulp in the liquid with the back of a spoon to release as much pulp as possible. Strain out any remaining seeds.

Stir together the tamarindo liquid, honey, and mustard. Bake the chicken breasts in a baking dish at 350 degrees for 30 minutes. Brush the chicken with the tamarindo mixture.  Bake for 15 to 20 minutes longer or until cooked through, brushing frequently with the tamarindo mixture.
