Jiggly Cactus Pear Salad


1 3-ounce package strawberry-flavored gelatin
1 1/2 cups boiling water
1 3-ounce package cream cheese, softened
1/2 cup strawberry low-fat yogurt
3 Frieda’s Cactus Pears (any variety), peeled and diced


Dissolve gelatin in the boiling water in a bowl. Cool to room temperature. Beat the cream cheese and yogurt in a medium bowl until blended. Stir in the gelatin mixture and mix well. Chill until the mixture is the consistency of unbeaten egg whites. Gently fold in the cactus pears. Spoon into a 4-cup mold. Refrigerate until firm.
