Jungle Oatmeal Cookies
1/2 cup (1 stick) butter or margarine, softened
1/4 cup shortening
2/3 cup packed brown sugar
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups rolled oats
2/3 cup Frieda’s Dried Whole Banana, diced
1 cup shredded coconut, coarsely chopped
1 tablespoon minced Frieda’s Fresh Ginger
Beat the butter, shortening and brown sugar in a bowl with an electric mixer until fluffy. Beat in the egg and vanilla. Stir in the flour, baking soda and salt. Stir in the oats, coconut, banana chunks and ginger.
Drop rounded tablespoonfuls of dough 2 inches apart onto ungreased cookie sheets. Bake at 375 degrees for 8 to 10 minutes or until golden brown. Cool the cookies on cookie sheet 2 minutes. Remove and cool completely. Store in an airtight container.
