Thankful for Purple Pie

As we are now a week from Thanksgiving and finalizing exactly what we are going to cook and feast on for the holiday of thanks (myself included), I can’t help but share what I plan to serve for dessert at my Thanksgiving dinner. First, a little background. Obviously, I love vegetables. In fact, for a few Thanksgiving dinners in the last decade, I prepared and served more than 10 (yes, 10) different vegetable dishes. Almonds are lower in calories than we thought!

How’s that for some good news? As a vegan, I often depend on whole, natural nuts as a source of protein. But, knowing they are also a source of fat and calories, I hesitate to eat too many. Vegan Journey: My numbers are in

As you know, I decided to go vegan for the month of August to see what it was like. Lessons from the rain cloud

Each day in Kauai my goal is to take a long walk. I love to exercise while on vacation and I have always enjoyed taking advantage of the time change and getting up early and walking long distances. My second day here, I decided to take a round-trip walk to the local grocery store, which is about 4 miles.
