Macadamia Pineapple Crisp


1 fresh pineapple peeled and cut into 1-inch chunks
1 cup shredded coconut
1 cup oatmeal
1 cup chopped Macadamia Nuts
2 tablespoons brown sugar
1 tablespoons minced fresh Frieda’s Ginger Root
1 cup butter or margarine
Vanilla yogurt or cinnamon ice cream


Arrange pineapple chunks in a 12×8-inch baking dish. Combine the coconut, oatmeal, Macadamia Nuts, brown sugar, and Ginger Root. Cut in the butter or margarine. Sprinkle mixture over pineapple evenly. Bake in a 350° oven for 45 minutes. Serve warm or cool with vanilla yogurt or cinnamon ice cream.
