Mashed Oca with Fresh Herbs
1 4-ounce package of Frieda’s Oca
Chicken broth or water
3 to 4 tablespoons milk
2 to 3 tablespoons butter or margarine
2 tablespoons mixed desired Frieda’s Fresh Herbs (Chervil, Basil, Sage, or Dill)
Salt & pepper to taste
Peel Oca, if desired, and chop. Place in a saucepan with broth or water to cover. Bring mixture to boiling; reduce heat. Simmer, uncovered till fork-tender. Drain oca; place in a mixing bowl with milk, margarine, desired herbs, salt and pepper. With a mixer or potato masher, mash oca.
