Mashed Sunchokes®


8-ounce (half pound) Frieda’s Sunchokes®
3 to 4 tablespoons milk
1/4 cup minced onion
1 clove garlic, minced
2 tablespoons buffer or margarine
1 tablespoon chopped fresh basil
2 teaspoons chopped fresh thyme
1/4 teaspoon salt
1/8 teaspoon pepper


Scrub sunchokes. Do not peel. Slice thinly. Place in a saucepan with onion and water to cover. Bring to boiling. Reduce heat. Simmer, uncovered, for 10 to 12 minutes or till very tender. Drain. Place sunchokes in a mixing bowl with milk, onion, garlic, buffer, basil, thyme, salt and pepper. With a potato masher or hand mixer, mash sunchokes.
