Melon with Kiwano® Mint Sauce


1 cup honeydew or cantaloupe chunks
1 cup watermelon chunks
1 Kiwano®, halved lengthwise

Kiwano® Mint Sauce
1 Kiwano®, halved lengthwise
1/2 cup melon chunks (any variety)
2 teaspoons Fresh Mint, chopped
1 teaspoon grated orange zest
1 teaspoon sugar
Fresh Mint sprigs (optional garnish)


Toss together honeydew and watermelon chunks. Carefully scoop out Kiwano pulp and add to melon mixture—seeds and all—saving the shells.

Into blender or food processor container, add Kiwano pulp, melon chunks, mint, orange zest, and sugar. Cover and process until smooth. Add sauce to melon mixture to taste.

Using the Kiwano shells as 2 serving bowls, divide melon mixture into each bowl. Drizzle with additional sauce.
