New Zealand Flan


4 eggs
2 cups light cream or milk
1 cup honey
1/8 teaspoon salt
4 kiwifruits or gold kiwifruits, peeled and thinly sliced
1 pint fresh strawberries, hulled and thinly sliced
1 large banana, peeled and thinly slice&
1 cup currant jelly or apple jelly
1 to 2 tablespoons amaretto or water


Beat eggs with a wire whisk till blended. Whip in milk, honey and salt with whisk till well blended. Pour mixture into a 9-inch pie plate. Set pie plate in a shallow baking pan on oven rack; pour 1 inch of hot water into shallow pan. Bake custard in a 350-degree oven for about 35 minutes or till a knife inserted halfway between center and edge comes out clean. Cool; then chill.

At serving time, arrange sliced of kiwifruit, strawberries, and bananas atop flan. (You may want to invert custard onto a serving plate before decorating it or serve directly from the pie plate.)  Melt currant or apple jelly over low heat in saucepan; stir in liqueur to taste or water to thin slightly.  Spoon or brush jelly mixture over fruit. Cut flan into wedges to serve.
