Okinawan Sweet Potato Mash
2 pounds Okinawan sweet potatoes
2 tablespoons unsalted butter
1 1/2 cups 1% milk
Salt and pepper, to taste
Combine butter and milk in small saucepan and bring to a simmer.
Peel potatoes and cut into large chunks. Add potatoes to a pot; cover with cold water. Bring to boil over high heat. Reduce to low, then simmer, uncovered, until potatoes are tender, about 15 minutes. Strain potatoes. Run through a ricer into large bowl, or roughly mash with fork or masher.
Add hot milk-butter mixture into hot potatoes and stir to combine (or continue to mash until smooth). Season with salt and pepper to taste.
