Persimmon and Pomegranate Fruit Salad
3 Fuyu persimmons, peeled and chopped into 1/4- to 1/2-inch pieces (discard any seeds)
3/4 cup pomegranate arils
1 Granny Smith or Fuji apple, peeled, cored, and chopped into 1/4- to 1/2-inch pieces
7 to 10 fresh mint leaves, thinly sliced
2 teaspoons lemon juice
1 teaspoon honey
Gently toss all ingredients together. Best when served same day.
