Known as cardoni in Italian, Cardoon looks like very large celery stalks that are fibrous and green-gray in color. Although it resembles celery, the taste is not similar, and the leaves are not recommended for eating. Once cooked, the flavor is meaty, nutty and bittersweet. It is commonly steamed and served with a dipping sauce made with olive oil, garlic, and anchovies.
