Prosciutto Fruit Salad with Passion Fruit Dressing


Bibb lettuce leaves or fresh spinach leaves
2 ounces prosciutto or ham slices, halved lengthwise
1 cup fresh pineapple chunks (Try it with Zululand Queen Baby Pineapple.)
1 cup Pepino Melon, Kiwifruit, Gold Kiwifruit, or peaches, peeled and sliced

Passion Fruit Dressing
2 ripe, wrinkled Passion Fruits
3 tablespoons olive oil or vegetable oil
1 teaspoon honey
1/8 teaspoon pepper


Arrange lettuce leaves on 4 salad plates, then add prosciutto or ham strips, pineapple, and pepino melon. Chill until ready to serve.

Cut passion fruits in half, and scoop out pulp into blender or food processor container. Add oil, honey, and pepper. Cover and process until seeds are pulverized. Drizzle dressing over salads. Serve chilled.
