Quick & Easy Kumquat Marmalade


About 1 1/2 pounds Frieda’s Adorable Kumquats
1/2 cup sugar
1/2 cup water
Pinch of sea salt


Halve kumquats and remove seeds, then roughly chop. Measure out 2 cups chopped fruit and place in non-reactive saucepan. Gently mix in sugar. Let sit 15 minutes. Add water, cover, and cook over medium heat 5 minutes, or until skins are turning translucent. Remove lid, and simmer 15-20 minutes, or until thickened into syrup. Remove from heat and stir in sea salt. Pour into clean jar and store refrigerated up to two weeks.
