2 red bell peppers, sliced and seeded
1 Frieda’s Shallot, finely diced
1 cup fresh cilantro, finely chopped
1 tablespoon olive oil
1 tablespoon rice vinegar
1/4 teaspooon cayenne pepper
Juice of 4 Frieda’s Key Limes
Peel, seed and finely dice papaya and mango into 1/4-inch pieces. Chop red bell pepper into 1/4-inch chunks.
Combine fruit, peppers and all remaining ingredients in large bowl and mix to blend. Season to taste with salt and pepper. Refrigerate for 30 minutes (covered) to let flavors blend before serving.
Enjoy with corn chips or serve as a relish with chicken or fish.
