Young Coconut Chia Pudding

Ingredients

  • Meat from 2 young coconuts (about 1 cup)

  • 1/2 cup coconut water (reserve the rest to enjoy later!)

  • 3 medjool dates, seeded and roughly chopped

  • 2 tablespoons chia seeds

  • 1 teaspoon vanilla extract

  • Tiny pinch of sea salt

  • About 1 cup of your fruit of choice

  • Optional garnish: coconut flakes

Cooking Steps

    In blender, blend together coconut meat, coconut water, dates, chia seeds, vanilla extract, and sea salt until as smooth as possible. (A high-powered blender such as Vitamix or Blendtec will yield a creamier, smoother pudding.)

    Pour into bowl and chill 15 minutes.

    Top with your favorite fruit and/or coconut flakes; serve chilled.
