Roasted Aioli Pearl Potatoes


1.5 pounds Organic Klamath Pearl Potatoes
1 tablespoon olive oil
2 tablespoon butter, melted
3 tablespoon mayonnaise
2 cloves fresh garlic, minced
2 tablespoon fresh parsley, chopped
1 tablespoon fresh basil, chopped
Salt and pepper to taste
Parmesan cheese, for garnish
Fresh parsley, for garnish


Halve potatoes, set aside. In a large bowl, combine the next seven ingredients (olive oil to salt and pepper). Add potatoes and toss. Next, place potatoes in a roasting pan, uncovered, and roast at 350 degrees for about 30 minutes, stirring often. Once potatoes are cooked, remove from oven and garnish with Parmesan cheese and parsley.
