Roasted Elephant Garlic
Whole heads of Frieda’s Elephant Garlic, in skins
Spray-on pan coating, or cooking oil
Arrange whole heads of garlic, paper left on, in a greased shallow baking pan or roasting rack. Bake in a 325F oven for about 1 hour. Pierce with a wooden pick to test for doneness. Garlic should be very soft.
Cool 5 minutes. To serve, remove individual cloves of garlic; loosen skin on one side and squirt out contents onto a baked potato or steamed vegetables, onto hot French bread, crackers, vegetable slices, or spread over barbecued meat or broiled poultry.
